Fun sized confit of garlic. I added bay leaf and peppercorn which I’ve never done. Then I creamed the garlic into some butter. This concoction is to be spread on bread and lightly toasted for tonight’s asparagus panzanella.

I am eating eggs and cheese but no meat for the next two weeks. Not sure I can pull it off.
Pork is marinated over one or two days in a combination of dried chiles and then slowly cooked with a gas flame on a vertical rotisserie called a trompo (lit: spinning top), very similar to how shawarma is cooked, with a piece of fresh onion and a pineapple on top. The juice from the pineapple contains an enzyme called bromelain, which breaks down protein and makes the meat very tender. When ready, the meat is then thinly sliced off the spit with a large knife. It is served on small tortillas, with finely chopped onions, cilantro and a small slice of pineapple, and usually topped with some lime juice and hot salsa. wp

I’m going to remake, with better lighting, this photograph that I randomly took in 2009.This photo requires several hours of cooking. This digital photograph has a french recipe.
Made the 30 minute sichuan style chicken noodle soup recipe from last week. Took more like 45 minutes but that’s because I don’t exactly have much of a kitchen. The roasted chicken I bought was ok but very salty. I could have diluted the stock without killing it. Check that, I should have but was still delicious. My tongue is still tingling from the sichuan pepper and room still smells of cinnamon, anise and leek.
